Description: Organic almond protein is derived from blanched almonds through the process of mechanical pressing to separate the oil from the protein. The extracted raw protein is then ground in the absence of oxygen using the kryonert® technology (special controlled temperature and product-friendly process).
Special Characteristics: Organic almond protein has an off-white to beige color, a characteristic smell, and flavor. It consists of 100% blanched almonds from Europe. It is characterized not only by its high protein content and essential amino acids but also by its high concentration of vitamins B2, B3, and E, as well as the minerals calcium and magnesium. It is free from soy, lactose, and gluten, making it suitable for a vegan diet.
Application in Food: In gluten-free products, organic almond protein can replace traditional flour varieties (200g of organic almond protein can replace 400g of wheat flour). Due to the exquisite taste of almonds, it can be used in bars, muesli, protein smoothies, or as a base for making vegan ice cream.
